Filipinos usually love eating rice. Like my husband, he cannot stand the day without eating rice especially during dinner. Whenever I gave him choices whether sandwhich or rice, he will pick the last.
In my case, I love eating sandwhiches. I can eat them three times a day for weeks. Whenever husband cannot go home for dinner, I just fitted myself a hefty sandwich.
But…..
For today it was different!
Hubz sought something “light” for dinner.
Then for a second, it briskly flashed on my mind what are inside our fridge;
Chicken fillet, tomatoes, cucumber, lettuce and ciabatta bread!
aha…got it I know what to prepare.
I told him…..sandwich for dinner and with that he said OKAY!!!
Whooo…I cannot believed it!!!! He wanted my favored sandwhich.
So for tonight I readied Grilled Chicken in Ciabatta Bread!
after his first bite, the man gave the thumbs up for the splendid treat! Yehey!
Guess sandwhiches will be a regular on our table during “light” dinner days!
Oh what’s your favorite light meal by the way?

Jeanny! I’ve loved reading all of your recent entries, they make me want to cook something wonderful for my family. I have the next 4 days off and I plan on doing JUST THAT! Sorry, I haven’t been around. That sandwich looks mighty good! I love that you put cucumbers on there, probably tastes wonderful
That sandwich looks delicious. Because my son-in-law is part Japanese we eat tons of rice. He only used to eat sticky rice but now I cook jasmine rice and he likes it and I like it better than the sticky rice.
We have rice at least 4 times a week.
The Ciabatta Bread looks really good. I make my daughter a sandwich everyday for her lunch. I think I will try that bread for her for a change.
i love grilled chicken fillet in a sandwich!
uy mkang masarap! Ako walang light meal, laging heavy haha
that sandwich looks so yummy! but i can’t stand my day with sandwich alone. i need rice (just plain rice).
Jeannie, I love sandwiches! Can you e-mail me your recipe for this one?
oooh, the sandwich looks good. i can eat sandwiches on occasion. it really depends on my mood, but i am a rice eater through and through. do you consider burgers sandwiches? i do…lol.
I love tuna salad for a light meal. You cook a lot. Me, just love to eat! Lol. =)
my mister is on an eternal diet kuno and always requests sandwiches for lunch! pero when he comes home naman he wolfs down on like a plateful of everything nakakataba. hahaha, ayun, no epek pa rin
i love sandwiches too! lalo na gourmet sandwiches, sarap sarap eh!
wow, that sandwich looks yummy
i sometimes make a sandwich out of adobo and menudo … whatever is left in the frige really. i love pairing this with pandesal, but over here, i use burger buns.
Burgers and sandwiches are really not my faves, but I sure would love to try making one for the hubby too…
Cafe Breton (a favorite) has this sandwich called Chicken Run that I really like. Perfect for light snacks, and sharing too!
LOL. This is funny, because Mr H will make a sandwich out of anything. Even rice! Whereas I like my rice as just rice.
