Marinara and the left over

I prepared marinara sauce for our pasta dinner 4 nights ago which I got the recipe from this site. Since I don’t have those canned tomatoes, I used 10 fresh red tomatoes. I peeled (blanch first for a couple of seconds) removed the seeds and off it goes to the pot with the other ingredients. I simmer for 1-1/2 hours or until the tomatoes are all squishy.

Then in a separate pan, I drizzle some EVOO(extra virgin olive oil) as what Rachel Ray calls it. Add a can of tuna, chopped onions and mushroom. Stir-fry for a minute or two. Add the tuna then the mushroom in the marina sauce. Then simmer for a while. Pour over pasta. It was delicious. D

Then I got some left over of the sauce. So I just put it in the fridge.

Then yesterday, we again had another pasta dinner. This time I add chopped green bell pepper to make the taste different from the marinara sauce we had. So what I did, I simmer the sauce for 3 minutes then I turned off the stove and throw the chopped green bell pepper and I covered it for a while. Then pour over pasta. Yummy. When I find my red pasta sauce boring, I add green bell pepper to enhance the flavor and It always works in my case D
